But once you know what to look for? Birch turns from background noise to one of your greatest allies.


It feeds you. Heals you. Warms your bones. Sweetens your table.

Wild Birch Syrup Glaze for Grilled Meat


For moose, venison, or anything wild.



A slab of grilled moose steak caramelized with dark birch syrup.


Ingredients:


½ cup birch syrup


2 cloves garlic, minced


1 tbsp apple cider vinegar


1 tsp cracked black pepper


1 tbsp olive oil



Directions:


1. Mix all ingredients.



2. Brush over meat while grilling — let it caramelize before flipping.



3. Serve with wild greens, roasted roots, and a thankful heart.




(Tip: Birch syrup is mineral-rich and stronger than maple — a little goes a long way!)
